Many would agree that the best part of a pizza is the cheese; its flavor, and its gooey pull when hot. While good bacteria contribute to the deliciousness, pathogens can cause food poisoning and other potentially harmful health effects. One such potent bacteria is Listeria, which can cause high mortality at low incidence. Food production industries are required to carefully analyze samples to detect potential contamination. However, current tests take a long time to produce results, disrupting product flow.

Cutting through the time constraints of food safety analysis is VPCIR Biosciences. The biotech company has designed an exclusive enzyme-based test for Listeria that overcomes this obstacle by offering accelerated results more sensitively. VPCIR Biosciences’ enzyme-based assays and test kits for food safety are backed by 25 years of research in the expression and purification of DNA modifying enzymes.

“When Mother Nature invented DNA, she also invented DNA modifying enzymes. We have found that DNA modifying enzymes, in many respects, offer a good alternative to DNA as a tracer for pathogenic microorganisms. That is the basis of our invention,” says Jan Mousing, CEO of VPCIR Biosciences.

Thousands of DNA modifying enzyme molecules exist in a bacteria cell, compared to a negligible number of DNA molecules.
These enzymes are active for at least an hour after release, and VPCIR’s test takes advantage of these two factors.

By providing the right substrate, the signal of detection can be amplified up to 700 times, making the company’s assay highly sensitive. The firm provides the required reagents, and the results can be retrieved in any specified readout prism that the client wishes, like colorimetric or fluorescence. VPCIR’s Listeria test is also efficient as it is designed to run numerous samples in a single line, helping food industries manage multiple batch analysis.

Listeria is a problem for the food industry because it is capable of contaminating a low-frequency cell population. The existing test for pathogen analysis is the traditional plating technique, which takes 3 to 5 days to produce results. This is a severe drawback for the food industry, as production takes place on a large scale, requiring quick sample analysis. In case of contamination, the industry is required to recall its products to prevent endangering consumers, incurring significant loss. VPCIR’s enzyme-based assay for Listeria tackles this vulnerability by providing results in less than 12 hours; a major breakthrough.

The results are obtained independently of the employed apparatus, making it versatile, without the need for expensive equipment or highly specialized expertise. VPCIR conducted field studies to determine the viability of their assays in challenging environmental conditions, demonstrating that the assay is robust.

NAATs have been the “benchmark” technology for rapid testing in the life sciences industry since the 1980s and are also the benchmark for VPCIR’s assay. The assay is directed to be much more sensitive and faster than NAATs for pathogen analysis.
VPCIR is also in the process of producing tests for three other harmful pathogens—salmonella, E. coli, and campylobacter.
