Executive Backing Elevating Food Safety Standards

Vanessa Cranford, Director of Food Safety & Quality Assurance at SSP America, combines microbiology, manufacturing, restaurant operations and FDA policy experience to build risk-based food safety systems, strengthen culture and align executive leadership with consumer protection and brand integrity.
Vanessa Cranford, Director of Food Safety & Quality Assurance at SSP America, is helping make food safety a responsibility shared across leadership and operations. Her work brings science, practical decision-making and preventive thinking together, giving airport directors the tools to manage risk across supply chains, restaurant processes, facility design and crisis events while protecting consumers and brand integrity. A key part of her leadership is bringing manufacturing-style discipline to groups of airport restaurants. Directors may oversee five, 10 or 15 SSP America locations within one airport, requiring a broader view of food safety across the portfolio. To prepare them for that responsibility, she requires directors of operations to become Preventive Controls Qualified Individuals (PCQIs), even though the certification is not required to manage airport restaurants. Cranford is a PCQI lead instructor and personally trains directors on FDA and FSMA expectations, along with SSP America’s standards and systems. The training prepares leaders to consider raw-material sourcing, HACCP principles, menu processes, design and construction, and incidents such as boil water alerts or drain backups. It gives them a preventive-controls mindset for managing food safety across an entire airport portfolio. Extending Food Safety across the Business Food safety at SSP America connects with operations, procurement, culinary, design and construction, maintenance and marketing. Cranford works closely with teams across these functions, listening to their needs and building solutions suited to the risks of the business. Trust and open communication shape how Cranford leads food safety across the organization. Strong relationships encourage teams to raise concerns early and participate in resolving them. Policies developed only from a technical perspective can create friction in execution, so she combines food safety expertise with an understanding of how each function works. Her leadership is shaped by experience across microbiology, production, restaurants and regulatory policy. Cranford oversaw Disney’s food microbiology laboratory, worked in produce production and managed East Coast food safety responsibilities for a restaurant chain operating in 66 countries. Her work at the FDA in policy and outbreak response strengthened her regulatory knowledge and crisis-management capabilities. “ We listen, partner and lead with science, transforming food safety into a collaborative system where executive support and operational trust drive resilience and consumer protection. ” Consistency is supported through structured controls. SSP America conducts three internal inspections per location each year, supported by line checks, documentation and recordkeeping. Standardized food safety and allergen materials simplify key requirements, with French and Spanish versions supporting communication across teams. Executive Support Strengthens Leadership Impact Cranford has built the leadership alignment needed to move food safety priorities throughout SSP America. Support from the CEO and C-suite allows her to connect functions around shared expectations and translate executive commitment into action. Strong alignment also supports timely decisions when information is still developing. Cyclospora concerns, Salmonella associated with jalapeños and a chips recall show how quickly supply chain risks can emerge. Cranford combines scientific judgment with knowledge of the business to determine whether ingredients should remain on menus, be temporarily removed or be substituted. Using Data to Direct Resources The next stage of Cranford’s work focuses on connecting information across SSP America’s food safety systems. Supplier approvals, operational checks, complaints, training records, recalls and crisis-management events can provide a clearer picture when viewed together. Data analytics can reveal trends, recurring deviations and areas that need greater attention. The resulting insight helps focus limited resources on demonstrated risks and supports solutions shaped around business needs. Cranford plans to bring science, connected data and operational knowledge even closer together. PCQI-trained leaders, cross-functional partnerships and executive alignment create a strong foundation for that progress. Better visibility across supply chain and restaurant operations can help SSP America identify emerging risks earlier, focus resources where they matter most and continue strengthening preventive food safety as the business evolves.
